CHOCOLATE MARSHMALLOW PROTEIN MUFFINS

INGREDIENTS:

  • MUFFIN:
  • 3/4 Cup Whole Wheat Flour
  • 3/4 Cup OxyWhey Vanilla Protein Powder (Click here)
  • 3/4 Cup Almond Milk
  • 1/4 Cup No Fat Greek Yogurt
  • 1/2 Cup Sweetener
  • 1/2 Cup Apple Sauce
  • 1/4 Cup Coconut Oil
  • 2 Egg Whites
  • 1/2 Tsp Baking Powder
  • 1/4 Tsp Baking Soda
  • 12 Marshmallows
  • FROSTING:
  • 1 Cup Extra Light Cream Cheese
  • 3/4 Cup Sweetener
  • 1/4 Cup Cacao Powder
  • 3 Tbsp Almond Milk

METHOD:

1. Pre-heat oven to 175C/347F

2. In a large bowl, mix together all the cake ingredients except the marshmallow

3. Pour the batter into 12 cupcake moulds and push 1 marshmallow into each

4. Bake for 25 minutes

5. Blend together the frosting ingredients

6. Frost evenly onto the 12 muffins

7. Devour!
